Do I need one end piece or two?

Most runs need two - one for each end of the ramp - with middle sections filling the width in between. Order enough end pieces to close every exposed end of your installation.

What is the difference between the 50mm and 75mm end pieces?

The 50mm end piece holds traffic to around 10mph and suits cars and bikes with an easier transition. The 75mm end piece holds traffic to around 5mph and is better suited to larger vehicles such as trucks, HGVs and lorries.
